Gluten-Free Sourdough Bagels
We take our bagels very seriously in New Jersey.
I was shocked by how close these gluten-free sourdough bagels were to the real thing.

Recipe ⬇️
Dough
• 250 g active GF sourdough starter
• 260 g warm water
• 420 g King Arthur GF Bread Flour
• 2 tsp white sugar
• 1 tsp brown sugar
• 2 tsp salt
• 1 Tbsp olive oil
Mix wet ingredients in a stand mixer, then add all dry. Mix until smooth + thick. Rest 20 min.
➡️ Shape
Divide into 6 even pieces, roll into balls, poke holes. Widen holes generously.
➡️ Proof
Cover lightly (plastic wrap or damp towel). Rest 60–75 min until puffy (not doubled).
➡️ Boil
25 seconds per side in water with 1 Tbsp brown sugar
➡️ Bake
425°F for 22–25 min until golden.
➡️ Rest
60 minutes before cutting
