No Bake Chocolate Eclair Cake
Ingredients:
2 boxes (3.4 oz each) instant vanilla pudding mix
3 cups cold milk
1 container (8 oz) whipped topping, thawed
1 box graham crackers
1 can (16 oz) chocolate frosting
Directions:
In a large mixing bowl, whisk together the vanilla pudding mixes and cold milk until smooth and slightly thickened. Let the pudding stand for a few minutes, then gently fold in the whipped topping until the mixture is light and creamy. Line the bottom of a 9x13-inch baking dish with a layer of graham crackers, filling in any gaps with smaller pieces.
Spread half of the pudding mixture over the graham crackers in an even layer. Add a second layer of graham crackers, then cover with the remaining pudding mixture.
Top with one final layer of graham crackers. Warm the chocolate frosting just enough to make it easy to spread, then evenly cover the top layer of graham crackers.
Cover the dish and refrigerate for at least 8 hours, or overnight, until the layers soften and blend together. Cut into squares and serve cold.
