lazy girl birria tacos 🫶🏻🌮💞
These birria tacos are super easy for when you want a quick dinner when you get home from work or just don’t feel like standing in the kitchen cooking for hours! Seriously lazy girl approved! 💞🌮
🛒 What You’ll Need:
• Aldi birria meat 🥩 (or chuck roast + birria seasoning packet)
• Birria seasoning packet (I used extra for more flavor!)
• Cumin + salt 🧂
• 1 carton beef broth
• 1 onion, roughly chopped 🧅
• Cilantro 🌿
• Corn tortillas (I used yellow corn) 🌽
• Optional: quesadilla cheese, for that perfect melty pull 🧀🤤
⏰ Instructions
1. Prep it:
Thaw your meat if it’s frozen. Add it to the crockpot with chopped onions, beef broth (I used the whole container), the seasoning packet, cumin, and salt.
2. Cook it:
• Low: 8–9 hours (best flavor)
• High: 4–5 hours (if you’re in a rush)
Mine was just under 3 lbs, I did low for 8 hrs, then high for 1 hr at the end was perfect.
3. Shred it:
Once the meat’s tender, remove it and shred with a fork, it should fall apart easily. Add it back into the crockpot on low for 15–30 minutes to soak up even more flavor.
4. Assemble your tacos:
Dip corn tortillas into the broth on both sides, then lay them on a hot pan (medium heat).
Add shredded meat + cheese to one half, fold, and cook until crispy. Flip and cook the other side until golden.
5. Serve:
Pour some of the broth into a small cup for dipping, and top with chopped onion + cilantro. A squeeze of lime on top makes it chef’s kiss. 💋

• Corn tortillas can rip easily, so handle gently when flipping!
• The broth gets even better the next day, save leftovers for quesadillas or birria bowls.
