Bruschetta Eggs are one of my favorite recipes to make for breakfast!

Ingredients you’ll need:

-mixed greens

-eggs

-1 medium sized tomato

-1 tsp garlic

-1 tbsp olive oil

-fresh or dried basil

-salt and pepper to taste

-balsamic glaze

Bruschetta:

First dice up the tomato. Once diced, add tomato, garlic, olive oil, basil, and salt and pepper to bowl and mix. (You can either have this prepped or make the day of)

Pan fry the egg(s) to your liking. Once egg is cooked add some mixed greens to a plate and add egg on top. Add your homemade bruschetta mix to the top of your egg. Finally, top it all off with a drizzle of balsamic glaze.
