Sweet PotatoPie

2 pie crusts - ready made or homemade

3-4 good sized sweet potatoes

1 stick unsalted butter

2 large eggs

1/2 c evaporated milk

2 tbsp sweetened condensed milk

1/2 orange - juiced

1/2 lemon - juiced

1.25 c granulated sugar

1.25 c light brown sugar

Splash of vanilla

Sprinkle of nutmeg

1 tbsp ground cinnamon

**Preheat oven to 400**

- Rinse sweet potatoes

- Line baking sheet with foil

- Place potatoes onto foil & poke a few holes in each

- Place into preheated oven and bake for 1 hour or until fully soft

- Remove from oven and let cool until they are cool to the touch

- Remove the skin and place into a bowl and use an emersion blender or food processor and blend until smooth

- Add milks, sugars, juices, vanilla, cinnamon, nutmeg and butter and mix with an electric mixer until combined

- Taste test to see if it needs anything

- Add in the eggs and mix again

- Set oven to 350

- Divide batter evenly between the 2 pie crusts

- Place into the oven and bake for 45 minutes or until fully cooked

- Remove and let fully cool

- Refrigerate over night
