Tomato Pie 🍅🥧

We always get such an abundance of tomatoes in the summertime! Baking a tomato pie is one of my favorite ways to enjoy them! We also stew a lot of them to make sauce & store in the freezer to last us through winter. We’ll make anything with those from pasta sauce to chili! Here’s my recipe for the most delicious and refreshing tomato pie! All you’ll need is milk, four, oil, tomatoes, cheese & mayo!

- Follow pie crust instructions to make the flaky crust

- Bake that crust for 10 to 15 minutes and 400° to prevent some sogginess

- Then you slice your tomatoes thick and put them to dry between paper towels & salt, and pepper them

- Take the crust out and layer all your tomatoes inside

- Add basil and whatever other herbs

- Mix together some mayonnaise and three or four cheeses of your liking. I’ve been using white cheddar, asiago and goat cheese.

- Top the cheese mixture over the tomatoes and bake at 400° for 45 minutes!
