Food Diary: Viet Edition

I’m always looking to cook meals that include fresh veggies with the meals. I noticed a lot Viet food includes that. A few dishes I’ve learned to cook:

• LEMONGRASS CHICKEN •

I never cooked with lemongrass before, and it always smells amazing whenever it’s included 🥰 Of course gotta have rice & my typical salad (romaine lettuce, bell peppers, cucumbers & onions). Also made nuoc mam (a fish sauce), typically used as a dip but I’ll use it as a dressing.

• CHICKEN PHO •

Not my best presentation in the photos but ever since I learned how to make pho broth, I haven’t been to a pho restaurant since lol. Of course added fried chili oil & jalapenos for that extra spice & flavor 🤤

• SHRIMP SUMMER ROLLS •

I hear people calling these either Spring or Summer Rolls, but where I’m from they typically call these “Summer Rolls”. And the fried ones are “Spring Rolls”. I don’t eat pork so it’s not included like it is in the restaurants. Added a piece of romaine lettuce & of course the vermicelli noodles. Then a sliver of cucumber, cilantro & the shrimp 🍤 I forgot to take a pic of the peanut dipping sauce that goes with it too 🙃
