Mexican 🐓 Chicken Casserole

This recipe brings back childhood memories. My mom used to take about 20 minutes top prepping this. It’s super simple to make and is great for making meals stretch. Its ingredients are also super affordable!

🧂Ingredients:

Whole wheat tortillas

Mexican Velveeta cheese

1 cup shredded cheese

2 chicken breasts shredded

1 to 2 cans rotel mild

2 cans cream of chicken

Black olives (optional)

Garlic salt

Salt

Black pepper

Creole seasoning

Garlic powder

Onion powder

Ground cumin

🍽️Directions:

Preheat oven to 400 degrees. Cook, season, and shred chicken breasts in a pan. Add cream of chicken, rotel, and Velveeta cheese bringing it to a boil. You can add more seasoning if you like too. I used the same pan I cooked the chicken in so I could use the seasoning from cooking the chicken. Pour mixture into a casserole dish then cover with a layer of torn tortillas. Top with cheese and put in the oven for 30 minutes.
