Spooky Stuffed Pumpkin Peppers🎃
These jack-o'-lantern stuffed bell peppers are a healthy, budget friendly, & festive twist on a classic dish! Filled with savory ground beef, cauliflower rice, and melted mozzarella, they’re both nutritious and adorable. Perfect for adding a spooky touch to your fall meals!
Recipe:
🎃 4 orange bell peppers
🎃 1 lb Ground beef
🎃 1 cup cooked cauliflower rice
🎃 half an Onion
🎃1tsp italian seasoning
🎃 tsp Minced garlic
🎃 1 tbsp Salt and pepper
🎃1 tsp smoked paprika
🎃1/2 cup Mozzarella cheese, shredded
Note: you can also add half a can of diced tomatoes to add moisture!
Instructions:
1. Preheat the oven to 350 degrees
2. Cook ground beef, after fully cooked, add in the seasonings.
2. Remove the tops from the bell peppers, and remove the seeds.
3. Using a sharp knife, cut the face of a Jack O Lantern into the side of each bell pepper.
4. In a mixing bowl, combine rest of the ingredients with the ground beef, except the mozzarella cheese.
5. Stuff the peppers with the meat mixture.
Top with the mozzarella cheese.
Bake for 25 minutes, or until the meat is cooked through.
