Cozy days ahead require delicious, easy soup ✨🌿🍅
This recipe requires very few ingredients, has very few steps, and makes plenty of leftovers for these cozy days ahead 😊
It’s versatile and can easily turn into a delicious homemade pasta sauce, and freezes well to use later!
Recipe below, I hope you enjoy what has become a kitchen staple as much as I do 😋
Ingredients ✨
🍅 10-15 tomatoes
🌿1/2 cup fresh basil
🧄 4-5 cloves garlic
✨3-4 tbsp olive oil
🧂 Salt and pepper to taste
Prep: Quarter tomatoes (doesn’t have to be small), chop garlic, roughly chop basil. This all gets blended later so it’s okay to be roughly cut 😊
1. Heat olive oil on medium high heat, add garlic and stir 30s-1min until fragrant
2. Add tomatoes, basil, drizzle with a little extra olive oil, salt and pepper to taste. Stir.
3. Cover, and continue to stir every few minutes. Bring heat down after maybe 5min or so to a low simmer, cover and cook 20min until tomatoes break down very easily.
4. Blend all ingredients
Enjoy 🍅✨🌿🥰

There’s nothing quite like a warm bowl of homemade soup to make any day feel cozier, especially as the seasons change and we crave that comforting warmth. And honestly, who has time for complicated recipes? That’s precisely why this easy tomato basil soup has become such a staple in my kitchen – it’s pure comfort without the fuss, and it truly delivers on deliciousness! One of the things I love most about this recipe is how genuinely simple it is. When I say 'few ingredients,' I really mean it! You're looking at fresh tomatoes, aromatic basil, garlic, a good olive oil, and basic seasonings. That's it! This approach not only saves time at the grocery store but also ensures you get to taste the beautiful, natural flavors of each component. No need for fancy chopping skills either; since everything gets blended, a rough chop is perfectly fine. It’s the kind of recipe that lets you enjoy the process without feeling overwhelmed. I often find myself making a big batch on a Sunday, knowing I've got healthy, homemade meals for days. For those of you looking for healthy eating options, this soup is a fantastic choice. It’s naturally vegetarian, making it a wonderful plant-based meal. And if you're like me and often keep an eye on carb intake, you'll be happy to know it’s also very low-carb and keto-friendly. Without any added sugars, starches, or heavy creams, you’re getting a soup packed with the goodness of fresh tomatoes – rich in antioxidants and vitamins – and the vibrant zest of fresh basil. It’s a guilt-free pleasure that fits beautifully into a healthy lifestyle, whether you're aiming for carb-free or just a lighter, nutritious meal. But this soup isn't just easy and healthy; it’s incredibly versatile, too! While it’s absolutely divine on its own, I often transform leftovers into other meals. My favorite trick? Turning it into a homemade pasta sauce. Just simmer it down a bit further if you want a thicker consistency, and toss it with your favorite pasta for a quick, flavorful dinner. It also makes a fantastic base for dipping a grilled cheese sandwich (if you’re not strictly low-carb, of course!) or even as a vibrant addition to a minestrone-style soup. I’ve even used a thicker version as a quick pizza sauce in a pinch! To make this delicious soup even more 'yummy' and 'tasty' to your personal preference, don't hesitate to experiment with simple additions. A tiny pinch of red pepper flakes can add a lovely warmth, or a swirl of good quality balsamic glaze at the end can deepen the flavor. For those who enjoy a richer texture, a splash of coconut milk or a dairy-free cream alternative (to keep it vegetarian/vegan) can add a delightful creaminess. When serving, I love to top mine with a sprinkle of fresh basil, a drizzle of extra virgin olive oil, and sometimes even a few homemade (or store-bought) croutons or a dollop of fresh ricotta if I'm feeling indulgent. Roasting the tomatoes and garlic before adding them to the pot is another simple step that elevates the flavor profile, giving the soup a beautiful depth and sweetness. This recipe truly embodies the joy of cooking simple, wholesome food that nourishes both body and soul. Give it a try; I bet it’ll become your new favorite go-to, just like it is for me!
