Every year I find myself excited for the Super Bowl…and it’s not because of the football…
There is no better excuse to load up on allllll the naughty apps you can dream of, and this recipe is a taco take on a classic buffalo chicken wing dip!

Ingredients
🍗 Shredded chicken (1lb or so)
🧀 1 block cream cheese
🧀 Mexican blend, sharp cheddar etc for topping
🫑 3 bell peppers
🧅 1 onion
🌶️ 1-3 jalapeños (depending on your spicy levels!)
🍃 1 lime, zested and juiced
🌽 1 can corn
🧂 Salt, pepper, paprika, chili powder, cayenne pepper, hot sauce, taco sauce to taste
1. Preheat the oven to 425° and prep the chicken. You can either buy store bought shredded, or grab some chicken breasts, boil them about 45min, and shred!
2. Dice bell peppers, onion, and jalapeños. Zest lime.
3. Heat drizzle of olive oil over medium high heat. Once hot, add in ingredients from step 2 & seasonings, cooking 6-7min.
4. Add in corn, chicken, and more seasonings mixing until evenly warmed another 6-7min.
5. In oven safe dish, pour in half of the ingredients and sprinkle a layer of shredded cheese. Pour the other half on.
6. Make a well in the center to add in the block of cream cheese. Sprinkle remaining shredded cheese.
7. Bake 10-15min until hot, broiling the last 2 minutes. Even though all ingredients get mixed once out of the oven, that crispy browned melted cheese taste/texture still comes through!
