Trying this pasta went better than I thought 👀

Anchovies have always given me the big *ick*, but my fiancé has been insisting we give this one a try. Low and behold, it didn’t taste fishy at all! It actually added such a deep and rich flavor that’s hard to describe to an otherwise simple and plain dish.

Getting right into it:

🐠 1 pack anchovies

🍝 1 pack spaghetti

🌿 1/2 cup parsley

🥖 1 cup bread crumbs

🧄 3 cloves garlic

🧂 Salt, pepper, olive oil

1. Cook pasta while prepping sauce, set aside

2. Pour anchovies including oil into pan on medium-high heat. Cook 6-7min or until cooked down

3. Add in garlic to help anchovies continue to cook down, 1-2minutes.

4. Add in parsley until wilted, and then breadcrumbs with a smidge of olive oil.

5. Add in pasta, additional breadcrumbs, and some more parsley.

6. Simple as that! Enjoy on its own or with some grated Parm 😋

... Read moreOkay, let's be real: for years, the idea of cooking with anchovies gave me serious pause. I pictured overpowering fishiness, and honestly, just a big 'ick' factor. But my fiancé kept raving about how they add incredible depth to sauces, so I finally decided to give it a shot with this garlic anchovy pasta recipe. And let me tell you, it was a game-changer! If you're like me and hesitant, please trust me on this. The magic happens when those little anchovies hit the hot olive oil in the pan. They don't stay whole or taste 'fishy.' Instead, they literally melt away, forming a rich, savory paste that blends seamlessly with the chopped garlic. This is where the deep, umami flavor comes from – it’s a secret weapon for elevating a simple pasta dish into something truly special. The process of anchovies cooking down is fascinating to watch, transforming from firm fillets into this aromatic base. Don't worry about measuring the anchovies too precisely; I usually just use a full pack, including their oil, as it adds even more flavor to the base. What I love most is how surprisingly quick this dish comes together. While the spaghetti cooks, you're already building your sauce. You start by letting the anchovies cook down until they’re almost dissolved. Then, adding the garlic creates this incredible aroma that fills your kitchen. Next, a handful of fresh parsley not only adds a pop of color but also a fresh, herbaceous note that balances the richness. The breadcrumbs are key here – they add a lovely texture and absorb some of that delicious oil, clinging to each strand of cooked spaghetti. When you see the finished garlic and anchovy pasta dish, tossed with breadcrumbs and parsley, it just looks so inviting. I often serve it right from the dark pan with a wooden spoon for that rustic, homemade feel, perfect for those 'close up' food shots! For those who love making their food look absolutely irresistible, here are a few tips. Don't be shy with the fresh parsley at the end; it adds vibrancy and a final fresh touch. A last drizzle of good quality olive oil just before serving really enhances the flavor and gives it that beautiful sheen. And if you're feeling fancy, a sprinkle of toasted breadcrumbs right on top adds an extra crunch and a professional finish. I've found that using high-quality ingredients, even for something as simple as a jar of anchovies and fresh garlic, makes all the difference. Seeing the fresh parsley and chopped garlic laid out at the start always makes me excited for the meal ahead. This recipe proves that even humble ingredients can create a gourmet-tasting meal that’s perfect for a weeknight dinner, or even a casual date night. It’s truly an easy pasta recipe that delivers huge flavor without a lot of fuss. For a little extra kick, I sometimes add a pinch of red pepper flakes with the garlic. And while the recipe suggests enjoying it on its own, a sprinkle of grated Parmesan is always welcome in my house! This anchovy pasta becomes a staple because it’s both comforting and sophisticated, and it's fantastic when you want something satisfying but quick. It's a dish that looks as good as it tastes, making every 'close up' shot a winner!
