Who says appetizers can’t make an easy dinner?✨
After starting a new job, most weeknights I don’t feel much like cooking! And when trying to lose weight for our upcoming wedding, eating out all the time isn’t exactly the best option.
With summer here already, I’ve been especially interested in the ever trending “Mediterranean diet”, and I just love how fresh the foods in that category are, and how great I feel after eating something I feel like can be otherwise dubbed a “naughty food” (like the cheese in this recipe).
I always forget that delicious food doesn’t have to be a full on dinner recipe, and this while classic appetizer isn’t a technically a meal, it always leaves me feeling surprisingly full!
Aside from a classic cheese board filled with meat and cheese, an easy caprese has been my go to!
Getting right into it..
Ingredients ✨
🍅 2-3 tomatoes
🧀 Fresh mozzarella cheese
🌿 Handful of fresh basil
🫒 Olive oil & balsamic vinegar
🧂Salt & pepper
1. Slice mozzarella (or buy pre-sliced for extra ease!), and slice tomatoes into equal sized pieces
2. Arrange in an alternating pattern
3. Season with salt, pepper, olive oil & balsamic drizzles, and an optional handful of fresh basil!
Enjoy! And if you have extra time on your hands before eating, make a few hours early, refrigerate, and the flavors only get better!!
