Eating seasonally - Summer & Heirloom Tomatoes 🍅✨🌿

Lately I’ve been trying to be better about “eating seasonally” - coming up with recipes that incorporate foods that are in season and at their best 🌿✨

That being said, even in the heat of summer I still get my Italian food cravings 😂🍝 This chicken parmesan with fresh tomato sauce made with heirloom tomatoes is truly the best of both worlds, and SO delicious!

The perfect dinner meal with leftovers for the work week 🤌

Ingredients

🍅 6-8 tomatoes

🧄 3 cloves garlic

🐔 3-4 chicken breasts

🥖 2 cups panko crumbs

🥚 2 eggs

🧀 Fresh whole mozzarella

✨ Olive oil, salt, and pepper to taste/for frying

1. The sauce: Heat olive oil over medium high heat, toss in roughly chopped garlic and tomatoes. Salt & pepper to taste. Cook 20-30min or until tomatoes have become soft, and blend together until desired chunkiness.

2. Preheat oven to 425°. Coat chicken breasts in eggs, and coat in panko crumbs.

3. Bring olive oil to a medium high heat, make sure the pan is HOT before putting in the chicken. Cook each breast until panko is golden brown and chicken is cooked through.

4. In a separate pan, pour a layer of sauce on the bottom. Add in chicken breasts, and top with more sauce, and finally mozzarella.

5. Place in oven for 10min, and broil for 1-2min or until cheese is golden brown.
