Ingredients
🍍 1 pineapple, diced
🍊 1 orange for zesting
🍚 1 cup rice
🥥 13oz coconut milk (1 can)
🐓 Chicken thighs
🌿 Chopped fresh cilantro
🧅 1 yellow onion
🧄 3 cloves garlic
1. Combine coconut milk, rice, 1/2 of cilantro, salt & pepper to taste. Cook rice.
2. Prep chicken with orange zest, salt, and pepper. Heat pan to medium high heat and sear the skin side of chicken. Set aside.
3. Put onions into pan chicken was cooked in, cook 3-5min then add in pineapple and remaining cilantro. Cook 2-3 more min, then add chicken.
4. Continue cooking all ingredients until chicken is cooked. Serve chicken over rice!
