HIGH PROTEIN BAKED BEEF TACOS: 🌮
These high protein baked beef taquitos hit the spot every time and they are so easy to make. They are so delicious and are an easy weeknight meal or a great appetizer that everyone will love and enjoy. The best part is they are high in protein, so they will keep you full and satiated.

Ingredients:
8-10 tortillas ( I used @sietefoods )
1 lb Grass Fed Ground Beef @parkerpasturesgrassfed
1/2 lime
1 cup of shredded Cheddar cheese @rumianocheese
1/2 of each red, orange, yellow pepper
1/2 large onion
1/2 cup of Greek yogurt
Taco Seasoning:
1 Tbsp Salt
1 Tbsp Garlic powder
1 Tbsp Onion Powder
1 Tbsp Chipotle Chile powder @donjuanchiles
1 Tbsp of oregano
1 Tbsp pepper
1 Tbsp cumin
Cilantro Lime Sauce:
1 cup of greek yogurt
1/2 head of cilantro
1 lime
2 tsp of white vinegar
Sprinkle of garlic powder( or one small clove), salt and pepper, chipotle powder
Directions:
1. Preheat oven to 425.
2. In a medium hot pan, add olive oil, onions and peppers, cook until translucent, then add in your ground meat. Add your taco seasoning, cook meat until browned and set aside.
3. On a large baking pan, add your tacos, greek yogurt, ground meat mixture, cheese an fold over. Spray with avocado cooking spray. Cook in oven for about 20 mins or until cheese is golden brown.
4. While tacos cook, make your cilantro lime sauce, in a blender, add all your ingredients and blend until smooth.
5. Once tacos are crispy, remove from oven, let cool and dip in cilantro lime sauce and enjoy!
