Attending Bronson Kaneao’s appreciation dinner at The Vault Hilo was truly a unique experience that highlighted the rich culinary culture of Hawaii in an intimate setting. The event was carefully curated with an assortment of appetizers, main courses, and desserts that brought authentic local flavors to life. One of the standout dishes was the cuttlefish salad and kimchee cucumber, which provided a refreshing and tangy start to the evening. The fish cake poke and pasteles stew offered hearty and savory tastes, blending traditional Hawaiian and Asian influences perfectly. Accompanying sides, such as hunto rice, white rice, and mac salad, complemented the main dishes and gave a wholesome, nostalgic feel. What made the dinner even more special were Bronson’s signature sauces and creative touches. The pickled lychee margarita was a delightful and unexpected drink that added a modern twist. The dessert menu was especially memorable, featuring a watermelon and cantaloupe platter drizzled with Bronson's unique sauce, and a pineapple upside-down cake served with vanilla ice cream soaked in a special mixture of Bronson’s sauce and condensed milk. This playful and indulgent pairing was unlike anything I had tasted before, perfectly balancing sweetness and savory complexity. The atmosphere at The Vault was vibrant, filled with good vibes and genuine appreciation among guests. It was evident that Bronson put a lot of heart into creating an event that celebrated both his craft and the local community. Being among the first group to experience this pop-up was a true honor, and it felt like sharing a special moment with friends and food enthusiasts alike.
