Hey Lemon8 fam! 👋 I wanted to share one of my absolute go-to recipes that's been a game-changer for my healthy eating and weight loss journey: my Bulgur Wheat, Zucchini, and Steak Stir-fry! I know sometimes finding meals that are both delicious and nutritious can be tough, especially when you're trying to stay on track. But trust me, this one hits all the marks. I first started experimenting with bulgur wheat when I was looking for healthier carb alternatives to rice or pasta. If you haven't tried it, you're missing out! Bulgur is a fantastic whole grain that's packed with fiber, which means it keeps you feeling full for longer, helping to curb those pesky cravings. It's also a great source of plant-based protein and has a lower glycemic index compared to many refined grains, making it perfect for stable energy levels throughout the day. Plus, it cooks super fast, which is a lifesaver for busy weeknights or when you're meal prepping for the week ahead. This recipe is incredibly versatile, but I particularly love the combination of tender steak and fresh zucchini. Here’s how I make it – it’s really simple! My Go-To Bulgur Wheat, Zucchini & Steak Recipe Ingredients: 1 cup bulgur wheat (medium grain) 2 cups low-sodium chicken or vegetable broth (or water) 1 tbsp olive oil 8 oz sirloin steak, thinly sliced against the grain 1 medium zucchini, chopped or sliced into half-moons 1/2 red onion, thinly sliced 2 cloves garlic, minced 1/2 red bell pepper, thinly sliced (optional, but adds great color!) 1 tsp dried oregano or Italian seasoning Salt and black pepper to taste Fresh parsley or cilantro, chopped (for garnish) A squeeze of fresh lemon juice (optional, for brightness) Instructions: Cook the Bulgur: In a medium saucepan, combine the bulgur wheat and broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for about 12-15 minutes, or until all the liquid is absorbed and the bulgur is tender and fluffy. Fluff with a fork and set aside. Prepare the Steak: While the bulgur cooks, heat 1/2 tbsp olive oil in a large skillet or wok over medium-high heat. Season the sliced steak with salt, pepper, and a pinch of oregano. Add the steak to the hot pan and sear quickly for 2-3 minutes per side until browned and cooked to your liking. Remove the steak from the pan and set aside. Sauté the Veggies: Add the remaining 1/2 tbsp olive oil to the same skillet. Add the sliced red onion and bell pepper (if using) and sauté for 3-4 minutes until they start to soften. Then, add the chopped zucchini and minced garlic. Cook for another 3-5 minutes, stirring occasionally, until the zucchini is tender-crisp. Combine: Return the cooked steak to the skillet with the vegetables. Add the cooked bulgur wheat. Stir everything together gently to combine. Season with the remaining oregano, salt, and pepper to taste. If you like, a little squeeze of fresh lemon juice at this stage really brightens up the flavors! Serve: Garnish with fresh parsley or cilantro. This dish is fantastic served warm, and it’s even better the next day as leftovers! This recipe is seriously a lifesaver for my meal prep. I usually make a bigger batch on Sunday and portion it out for my lunches during the week. It reheats beautifully and keeps me energized without feeling heavy.
