Honey Bread cake
Ingredients
Cake Batter
• 1/4 cup honey
• 1 cup milk (any milk of choice)
• 1/2 cup water
• 1/3 cup brown sugar (packed)
• 1/3 cup cocoa powder (unsweetened)
• 1 teaspoon ground cloves
• 1 teaspoon ground cinnamon
• 2 cups all-purpose flour
• 1 teaspoon baking soda
• 1 tablespoon baking powder
Syrup
• 3/4 cup water
• 2 tablespoons sugar
• 1 cinnamon stick
• 5 whole cloves
Filling and Topping
• 3 1/3 cups dulce de leche (or about two 14 oz cans)
• 7 oz heavy cream (about 3/4 cup)
• 1 1/2 cups chopped milk chocolate (or chocolate chips)
Instructions
Cake Batter:
1. In a large bowl, mix all the dry ingredients (flour, cocoa, sugar, baking soda, baking powder, spices).
2. Add honey, milk, and water to the dry mix, stirring until smooth.
3. Pour the batter into a greased baking dish.
4. Bake at 350°F (180°C) for 30-35 minutes, but keep an eye on it — some ovens bake faster!
5. Let the cake cool completely before cutting it into layers (or using whole for layering).
Syrup:
1. Combine water, sugar, cinnamon stick, and cloves in a small saucepan.
2. Bring to a boil over low heat. Once boiling, let it cook for 3 minutes, then remove from heat.
3. Strain out the spices if you prefer.
4. Use a brush or spray bottle to moisten the cake layers evenly.
Filling and Topping:
1. For the filling, use dulce de leche directly as is — creamy and ready to spread.
2. For the ganache topping: melt chopped chocolate and mix with heavy cream until smooth and glossy.
3. Assemble: Place one layer of cake, moisten with syrup, spread a thick layer of dulce de leche. Place another cake layer, moisten again, and pour ganache over the top.
4. Refrigerate to set before serving.
