Mimi’s Fideo

This is one of my husbands favorite meals. My mother taught me how to cook this and I’ve been making it for over 40 years.

1 to 2 tbl bacon grease

1 pkg of Fideo noodles

1 onion, diced

1 poblano, diced

Fry noodles in bacon fat until light brown and then add onions and poblano and sauté for another couple minutes.

2 cans of fire roasted tomatoes

1 can diced tomatoes with green chilies

1 can tomato sauce

1 to 2 cans of beef broth

Salt, pepper and garlic powder to taste

Add all ingredients into pan and add water if needed to cover noodles completely. Bring to a boil and then reduce heat to simmer for 20 minutes.

Add jalapeño if you like your dishes spicier.
