10 minute Healthy dinner- Caesar Pasta Salad!

My work requests that I bring this to every party we have!! It’s so addicting (but healthy!)

🥒 ingredients 🌿

- 1lb pasta

- 1 package of fresh dill chopped

- 1 pint cherry tomatoes halved

- 4 baby cucumbers or 1 large chopped

- 1 bag romaine lettuce

- 1 pint shaved Parmesan cheese

- [add chicken or roasted chick peas for some protein]

🍶 For dressing 🥬

-OPTION 1: Marie’s Caesar dressing (this one is SO delicious, but a bit of a higher cal option which is fine!!)

LOWER CAL OPTION 2: Mix together 1 vegan dill and 1 vegan Caesar dressing from Trader Joe’s. (These are seriously so good you will never know that they’re vegan)

-OTHER LOW CAL DRESSINGS: Bolthouse Farms, Ken’s Light Caesar, Primal Kitchen, Newman’s Own etc.

📝 Instructions ✏️

- boil pasta well done and rinse under cold water

- cut up tomato, cucumber, lettuce, and dill

- add ingredients to a bowl with Parmesan cheese and cold pasta

- if serving to a crowd, add dressing before serving.

- if saving left overs, add dressing to individual servings so lettuce does not get soggy OR leave lettuce out to add to individual servings.
