Vegan Pupusas with Curtido and Salsa Roja

🫓 Pupusa Dough FOLLOW👉🏾 Dé Licious

Ingredients👨🏾‍🍳👍🏾

2 cups masa harina (corn flour for tortillas)

1 ½ cups warm water (more if needed)

½ tsp salt

Instructions👨🏾‍🍳👍🏾

In a large bowl, mix the masa harina and salt.

Slowly add warm water and knead to form a soft, pliable dough (similar to playdough).

Cover with a damp cloth and let rest for 10 minutes.

🌱 Vegan Filling

Up to four to choose from👨🏾‍🍳👍🏾

1. Homemade Vegan cheese (made from veggies) (Type Delicious Cheese in the comments to get my recipe)

2. Refried Chickpeas (smooth or chunky)

3. Jackfruit or mushroom "meat" (seasoned and cooked)

4. Sauteed vegetables ( zucchini and onions)

To fill👨🏾‍🍳👍🏾

Divide the dough into 8 balls.

Flatten each ball in your hand, and place 1-2 tablespoons of filling in the center.

Gently close the dough around the filling and flatten again into a ¼” thick disc.

To cook👨🏾‍🍳👍🏾

Heat a lightly oiled skillet or griddle over medium heat.

Cook pupusas 3–5 minutes per side, until golden and slightly charred.

🥗 Curtido (Fermented Cabbage Slaw)

Ingredients👨🏾‍🍳👍🏾

½ head green cabbage, finely shredded

1 carrot, grated

¼ red onion, thinly sliced

1 tsp salt

½ cup apple cider vinegar

½ cup hot water

1 tsp oregano

Instructions👨🏾‍🍳👍🏾

In a bowl, massage the cabbage with salt for a few minutes until softened.

Mix in the carrot, onion, oregano, vinegar, and water.

Let it sit for at least 1 hour or ideally overnight in the fridge.

🍅 Salsa Roja

Ingredients👨🏾‍🍳👍🏾

4 Roma tomatoes, chopped

¼ onion

2 garlic cloves

1 small dried chili (optional, for heat)

½ tsp cumin

Salt to taste

Instructions👨🏾‍🍳👍🏾

Boil tomatoes, onion, garlic, and chili for 5 minutes.

Blend everything until smooth.

Simmer on low for 10 minutes to thicken. Season with salt.
