Mum’s Pumpkin & Carrot Soup — creamy, cozy, and full of love

Ingredients

1 medium sugar pumpkin or butternut squash

½ bulb garlic

5 carrots

2 sticks celery

½ diced onion

2 cups chicken stock (or veggie stock)

125ml heavy cream

Olive oil

Salt & pepper

Brunch of thyme

½ tsp cinnamon

½ tsp cumin

½ tsp nutmeg

Garnish:

micro herbs, pumpkin seeds, cream, chopped chives

Directions

Preheat oven to 350°F (176°C) and line a tray with parchment paper.

Halve and deseed the pumpkin, chop into chunks the same size as the carrots.

Add garlic (half a bulb), drizzle everything with olive oil, salt, pepper & thyme. Roast for 25–30 minutes until soft and caramelized.

While roasting, dice onion, celery, and carrots for your mirepoix.

In a large pot, sauté the mirepoix in olive oil for 2–3 minutes. Add roasted veggies, garlic, chicken stock, thyme, cinnamon, cumin & nutmeg.

Simmer for 20 minutes, then blend until silky smooth.

Stir in cream and season to taste.

Serve warm and garnish with cream, pumpkin seeds & herbs 🌿
