🥧 Ingredients
2 sticks celery, diced
1 shallot, finely diced
150 g mixed vegetables (peas, carrots, corn — frozen or fresh)
2 tbsp corn starch
2 tbsp water
2 cups chicken stock (get my recipe post on how to make homemade stock!)
500 g diced chicken breast or shredded rotisserie chicken
Salt & pepper to taste
1 box stuffing mix (prepared according to package directions) I used @stovetopstuffing

Sauté the base:
In a large skillet or saucepan, add a drizzle of oil or a small knob of butter.
Add diced celery and shallot, and cook over medium heat for about 3–4 minutes until softened and fragrant.
Add the veggies & chicken:
Stir in your mixed vegetables and diced chicken (if using pre-cooked rotisserie, add later).
Season lightly with salt and pepper.
Make the sauce:
Pour in the chicken stock and bring to a gentle simmer.
In a small bowl, whisk together cornstarch and water until smooth, then slowly stir into the simmering mixture.
Stir for 2–3 minutes until the sauce thickens slightly and coats the chicken and veggies.
(If using rotisserie chicken, fold it in now.)
Assemble the bake:
Pour the creamy chicken mixture into a baking dish or pie dish.
Fluff your prepared stuffing with a fork, then spoon it evenly on top to create a rustic crust.
Bake it golden:
Bake at 190 °C / 375 °F for 25–30 minutes, until the stuffing is crisp and golden and the filling is bubbling around the edges.
Serve & enjoy:
Let cool for 5 minutes before digging in — the sauce will thicken up beautifully underneath that cozy stuffing layer.
