INGREDIENTS

Crust

2 refrigerated pie crusts (about 450–500g total)

Or use your homemade pâte brisée!

Pecan Filling

150g chopped pecans

240g light corn syrup

50g light brown sugar

2 large eggs (100g lightly beaten)

45g melted butter

5g vanilla extract

1g cinnamon (optional)

1g fine salt

INSTRUCTIONS

1. Prep the Crusts

Preheat oven to 350°F (175°C).

Roll out the two pie crusts lightly just to smooth them.

Using a round 3–3.5 inch cutter, punch out circles.

Press each circle into a greased muffin tin, making sure the sides are snug.

(Should make 18–24 minis depending on cutter size.)

2. Make the Filling

In a bowl, whisk together:

Eggs

Light corn syrup

Brown sugar

Melted butter

Vanilla

Salt + cinnamon

Stir in the chopped pecans.

3. Fill & Bake

Spoon the filling into each crust — about 2 tablespoons each.

Bake 22–25 minutes, until the centers are set and the tops are golden.

Cool in the pan 10 minutes, then remove to a rack.

Finish with a sprinkle of flaky salt if making the elevated version.
