Steak Medallions
It’s been a while since I had a good steak. A few weeks back I found a good grass-fed steak deal at my favorite store and froze it with the aim of saving it for another time. I thawed it overnight and marinated it all day while the kids were at school. I wanted to show favor upon my meat-eating son by making the meal I craved most and ate throughout my pregnancy: Pepper steak. I decided to make a mushroom gravy with the au jus and pair the meal with fried rice. I found a half pound of asparagus for $1.50 and steamed about half of it. We got free strawberries today and I used those as garnishment. Strawberries are a great compliment because of their teeth cleaning capacity. It was only one steak, so that’s why I went with medallions. Then on the radio the songs I used to sing when I was younger about desire to be a mother came on at the perfect time.
