If you've never tried this traditional Mexican walnut atole, you are seriously missing out. It's incredibly creamy, subtly sweet, and has the most wonderful nutty flavor that just warms you from the inside out. I first stumbled upon a recipe for walnut atole a few weeks ago, and after a few tweaks, I think I've perfected my own version that I just have to share with you all. Making Atole de Nuez might sound intimidating, but trust me, it's actually quite simple. The key is fresh walnuts and a little patience. Here's how I make my go-to batch: My Favorite Creamy Atole de Nuez Recipe Ingredients: 1 cup raw walnuts 4 cups milk (whole milk works best for creaminess) 1/2 cup masa harina (corn flour for tortillas) 1/2 cup piloncillo (Mexican brown sugar cone) or brown sugar, to taste 1 cinnamon stick 1/2 teaspoon vanilla extract Pinch of salt Optional: a splash of evaporated milk for extra richness Instructions: Prepare the Walnuts: Start by soaking the walnuts in hot water for about 15-20 minutes. This helps soften them and makes them easier to blend into a smooth paste. Drain and rinse them afterward. Blend: In a blender, combine the softened walnuts with 1 cup of milk until completely smooth. You want a fine, almost paste-like consistency. Strain this mixture through a fine-mesh sieve into a medium saucepan, pressing down on the solids to extract all the liquid. Discard the remaining pulp. Thicken the Masa: In a separate small bowl, whisk the masa harina with 1 cup of cold milk until there are no lumps. Set aside. Combine & Simmer: To the saucepan with the strained walnut milk, add the remaining 2 cups of milk, piloncillo (or brown sugar), cinnamon stick, and a pinch of salt. Bring it to a gentle simmer over medium heat, stirring occasionally, until the piloncillo dissolves. Add Masa Slurry: Slowly pour the masa harina slurry into the simmering walnut milk mixture, whisking constantly to prevent lumps. Cook to Thicken: Continue to cook, stirring frequently (don't stop!), for about 10-15 minutes, or until the atole thickens to your desired consistency. It should coat the back of a spoon. If it gets too thick, you can add a little more milk. Finish: Remove from heat, stir in the vanilla extract, and if you're using it, the evaporated milk. Remove the cinnamon stick before serving. My Top Tips for the Best Atole: Don't skip straining the walnuts! This ensures your atole is super smooth and not gritty. Keep stirring! Especially after adding the masa slurry, continuous stirring prevents lumps and ensures even cooking. Adjust sweetness: Taste as you go and add more piloncillo or sugar if you prefer a sweeter nuez drink. Serving: I love serving mine warm in mugs, sometimes with a sprinkle of ground cinnamon or a whole walnut half for garnish. It's the perfect accompaniment to tamales or pan dulce! Want a variation? Try Atole de Avena con Nuez! If you're looking for a slightly different texture or want to incorporate oats, you can easily adapt this by making atole de avena con nuez. Simply replace half of the masa harina with finely ground rolled oats. You'll blend the oats with some milk similarly to the masa, then add it to the atole mixture. This gives it a slightly heartier, creamier texture and a wonderful oat flavor that complements the walnuts beautifully. It’s another fantastic way to enjoy this comforting nuez drink.
