First things first, let's talk about the stars of the show: the chile poblano and the creamy sauce. I always start by roasting my poblano peppers. Once they're roasted, pop them into a Ziploc bag or cover them in a bowl for about 10-15 minutes. This steaming process makes it super easy to peel off the skin. Then, remove the stems and seeds, and slice them into beautiful rajas (strips). This step is crucial for that authentic smoky flavor! For the chicken, I usually use boneless, skinless chicken breasts or thighs, cut into bite-sized pieces. Season them generously with garlic powder, onion powder, black pepper, and a touch of Goya all purpose seasoning. Sauté the chicken in a little oil until it's nicely browned and cooked through. Finally, add your cooked chicken back into the pan with the creamy poblano sauce. Give it a good stir to ensure everything is coated in that deliciousness. Let it simmer for another 5-10 minutes, just enough time for the chicken to absorb all those wonderful flavors and for the sauce to be perfectly warm and bubbly. I absolutely love serving my pollo con rajas y crema with warm corn tortillas and a side of Mexican rice. It's also fantastic over white rice or simply with a sprinkle of fresh cilantro.
