Ingredients

• 1 1/2 cup lentils, rinsed

• White onion, tomato, jalapeño, finely diced

• Potato, zucchini, carrots, diced

• Water + chicken broth (or veggie broth)

• Chicken bouillon

• Olive oil

• Fresh cilantro

Instructions

• Heat olive oil in a pot and sauté the onion, tomato, and jalapeño until soft and fragrant

• Add the lentils and stir. Pour in the water and chicken broth

• Add a spoon of chicken bouillon, stir, cover, and simmer on medium until lentils start to soften

• Add the potato, carrots, zucchini, and cilantro. Cover again and cook until everything is fork tender (about 45 mins)

• Serve warm with tortillas
