Loaded Biscoff Rice Krispie Treats
I took a basic childhood dessert and upgraded it with Biscoff, and there’s no going back. These come out extra soft, gooey, and packed with cookie butter flavor in every bite. The crushed cookies add texture, the marshmallows stay stretchy, and the Biscoff drizzle on top pulls everything together. This is my favorite!
Ingredients:
• ½ cup (114 g) unsalted butter
• 20 oz mini marshmallows
• 1 cup Biscoff spread
• 2 tsp vanilla extract
• ½ tsp salt
• 7 cups Rice Krispies cereal
• 2 cups mini marshmallows (folded in at the end)
• 1½ cups Biscoff cookies, roughly crushed
• Melted Biscoff spread for drizzle
Instructions:
1. Melt butter in a large pot over medium heat
2. Add marshmallows and stir until fully melted
3. Stir in Biscoff spread, vanilla, and salt until smooth
4. Remove from heat and fold in cereal
5. Mix in extra marshmallows and crushed cookies
6. Press lightly into a lined pan without packing tightly
7. Drizzle melted Biscoff on top and add more crushed cookies
8. Let set, then slice
Why I make this at home:
Store bought specialty treats add up fast. Making them myself means I control the texture and flavor, and I always go for extra soft and Biscoff heavy.
My personal preference:
I barely press them into the pan so they stay thick and pillowy instead of dense.
How I would improve it:
Next time I would swirl extra Biscoff into the top layer and add more crushed cookies for extra crunch.
