Strawberry Cinnamon Rolls

I wanted a strawberry cinnamon roll that actually tastes like strawberry. Not artificial. Not faint.

Store-bought never gets it right for me, so I make these at home and control every layer of flavor.

The key is the filling. Real strawberry puree, spread edge to edge so every bite has it, not just the center.

Here’s exactly how I made them:

DOUGH

240g warm milk (1 cup)

57g melted butter

1 egg

67g sugar

360g bread flour (3 cups)

4g salt

7g instant yeast

Mix, knead until smooth, then let rise until doubled.

STRAWBERRY FILLING

1 cup strawberry puree

2–3 tbsp brown sugar (adjust to taste)

1 tsp cinnamon

Optional: finely chopped fresh strawberries

Spread evenly over rolled dough

SHAPE & BAKE

Roll into a rectangle

Spread filling

Roll tightly

Cut and place in pan

Optional (trust me): pour 1/4 cup warm heavy cream over rolls before baking for extra softness

Bake at 350°F for 22–25 minutes

STRAWBERRY GLAZE

1 cup powdered sugar

1–2 tbsp strawberry puree

Splash of vanilla

Pour over warm rolls

Soft and full of real strawberry in every bite.

Next time I want to try freeze dried strawberry powder in the glaze for even more intensity without adding liquid.

Would you try strawberry rolls?!

One of the best tips I found is to use real strawberry puree spread edge to edge on the dough, so the flavor shines in every bite rather than just the center. Adding cinnamon balances the sweetness perfectly, giving it a warm, comforting spice that complements the strawberries. For a softer, more tender roll, pouring warm heavy cream over the shaped rolls before baking adds moisture and richness, enhancing the texture significantly. I’ve also experimented with folding finely chopped fresh strawberries into the filling for bursts of fruity texture. When it comes to the glaze, mixing powdered sugar with strawberry puree and a splash of vanilla is simple yet effective. For an extra punch of strawberry without extra liquid, freeze-dried strawberry powder in the glaze works wonders, creating an intense flavor that’s not watery. The process of rolling into a rectangle, evenly spreading the filling, rolling tightly, and cutting ensures neat, uniform rolls. A 350°F bake for about 22–25 minutes produces a golden crust while keeping the centers soft and fluffy. Overall, homemade strawberry cinnamon rolls are worth the effort, offering a delicious and visually appealing treat that’s perfect for breakfast, brunch, or dessert. I highly recommend giving this recipe a try, especially if you appreciate fresh, vibrant strawberry flavor in your baked goods.
