Single Serve Coffee Cake in a Mug
Single serve desserts have been my favorite thing lately because sometimes I want something homemade without baking an entire cake. I tested this coffee cake mug version at home and it turned out soft, and buttery.
Ingredients:
4 tbsp all purpose flour
2 tbsp granulated sugar
1/4 tsp baking powder
Pinch of salt
3 tbsp milk
1 1/2 tbsp melted butter
1 tbsp sour cream
1/2 tsp vanilla extract
Crumb topping:
1 tbsp flour
1 tbsp sugar
1/2 tbsp melted butter
Pinch of cinnamon
Directions:
Mix the cake ingredients directly in a mug until smooth. In a small bowl, combine the crumb topping ingredients until crumbly, then sprinkle over the batter. Microwave for about 60–90 seconds depending on your mug size and microwave strength until the center looks set but still soft.
I can eat warm coffee cake fresh from the microwave and so can you! Next time I may add chopped pecans or a vanilla glaze over the top.
