5 minute Lemon Mug Cake

This soft lemon mug cake turned out even better than I expected. I wanted something quick and cozy without making an entire cake, and this was perfect with a little whipped frosting on top.

Recipe:

4 Tbsp all purpose flour

2 Tbsp sugar

1/4 tsp baking powder

Pinch of salt

3 Tbsp milk

1 Tbsp melted butter

1 Tbsp lemon juice

1/4 tsp vanilla extract

1/2 tsp lemon zest

Mix until smooth, then microwave for 60–75 seconds depending on your microwave.

I love homemade mug cakes because they’re inexpensive, customizable, and you can make dessert in just a few minutes without turning on the oven. Next time I may add extra lemon zest for even more lemon flavor.

This 5-minute lemon mug cake hits the spot perfectly—it's incredibly soft and moist thanks to the real lemon juice and zest included. What I really love about mug cakes is their versatility. I often personalize mine by adding a sprinkle of poppy seeds or swapping regular sugar for honey to add a subtle depth of flavor. The microwave timing can vary depending on power, but I found 65-70 seconds optimal to achieve that tender texture without drying out the cake. For an extra zing, adding more lemon zest or a tiny dash of lemon extract amplifies the citrus flavor beautifully. One tip I've learned is to top the cake with a quick whipped frosting or a dollop of Greek yogurt mixed with a bit of honey. It balances the tartness with creaminess and makes it feel even more indulgent. Overall, this mug cake is a fantastic way to whip up dessert fast, especially when you're short on time or just want a single serving without leftovers. It’s affordable, uses simple pantry ingredients, and is a fun canvas for experimenting with flavors—whether adding fresh berries, a dusting of powdered sugar, or even a few chocolate chips for contrast. Give it a try next time your sweet tooth strikes, and you'll find it’s a fast, satisfying, and customizable treat that fits seamlessly into any busy day.
