Olive Garden Inspired Breadsticks

Copycat recipes hit different when they actually taste like the real thing.

Ingredients

Dough:

1¾ tsp active dry yeast

1 cup warm whole milk

2 tbsp granulated sugar

3â…“ cups all-purpose flour

1½ tsp salt

¼ cup unsalted butter, melted

Garlic Butter Topping:

3 tbsp butter

¾ tsp salt

¾ tsp garlic powder

½ tsp Italian seasoning

How I made it:

1. Activate the yeast: mix ½ cup warm milk, ½ tbsp sugar, and the yeast. Let sit 5–10 minutes until foamy (milk should be warm, not hot around 105–110°F).

2. In a mixer bowl, combine flour, remaining sugar, and salt. Add the yeast mixture.

3. Add melted butter and remaining milk. Knead with a dough hook for 6–8 minutes.

4. Place dough in a lightly greased bowl, cover, and let rise until doubled about 1 to 1½ hours.

5. Divide dough into 12 equal pieces (about 60–65g each). Roll each into a 7–8 inch rope.

6. Place on a parchment-lined baking sheet with space between them. Cover and let rise again 45-60 minutes.

7. Bake at 375°F for 12–15 minutes.

8. Mix garlic butter topping ingredients and brush over breadsticks immediately after baking.

From my experience, using warm whole milk between 105-110°F is crucial to properly activate the yeast and achieve that perfect dough rise. Patience during the two rise periods—about 1 to 1½ hours for the first and 45-60 minutes for the second—is key to a light, fluffy texture similar to the breadsticks served in restaurants. I found that dividing the dough into 12 equal ropes and rolling them to around 7–8 inches works perfectly for even baking. Laying them on parchment paper with enough space prevents sticking and ensures each breadstick cooks evenly. Baking at 375°F for 12–15 minutes produces a golden crust without drying out the softness inside. The garlic butter topping is what truly sets these breadsticks apart. I recommend using unsalted butter to control the saltiness, and freshly melting it with garlic powder, salt, and Italian seasoning immediately after baking helps the flavor penetrate while warm. Brushing the butter on straight from the oven allows it to soak in beautifully. If you want to elevate your breadsticks further, consider adding a sprinkle of grated Parmesan cheese or chopped fresh parsley on top of the garlic butter right after brushing. This adds a nice savory touch and bright color. One tip from my grocery runs is that quality ingredients like flour, sugar, and milk from Aldi’s paired with butter and eggs from Walmart work well and keep costs manageable. Also, don’t rush the yeast activation step; if the mixture doesn’t foam, your yeast might be expired or the milk temperature could be off, which will affect the dough rise. Overall, this recipe is approachable for novice bakers yet delivers restaurant-quality breadsticks that your family or guests will love. Sharing these warm, buttery breadsticks alongside pasta or soup makes for a comforting homemade meal that rivals Olive Garden’s!
