Huli Huli Chicken W/ White Rice & Broccoli
Ingredients:
- 2 1/2 lbs Boneless Chicken Thighs or Chicken Breast
- Seasoned Salt
- Black Pepper
-Onion Powder
- Adobo Seasoning
- Hickory Brown Sugar Seasoning
- 1/2 Tbsp Sesame Seeds (Optional)
- 1/2 Cup Pineapple Juice
- 1/4 Cup Soy Sauce
- 1/4 Brown Sugar
- 3 Tbsp Ketchup
- 1 Tbsp Cornstarch
- 1 Tsp Ginger Paste
- 1 Tsp Minced Garlic
- 6 Pineapple Rings
1. Preheat the oven to 375 degrees Fahrenheit.
2. Place boneless chicken thighs, in a single layer into a baking dish.
3. In a medium saucepan, whisk together black pepper, seasoned salt, onion powder, hickory brown sugar seasoning, adobo seasoning, sesame seeds, ½ cup pineapple juice, ¼ cup soy sauce, ¼ cup brown sugar, 3 tablespoons ketchup, 1 teaspoon ground ginger, 1 teaspoon garlic,and 1 tablespoon cornstarch. Heat over medium heat until it starts to thicken. Remove from the heat and reserve 1/4 cup of the marinade for later.
4. Pour the remaining sauce mixture over the top of the chicken thighs.
5. Bake in the preheated oven for 35-40 minutes or until the chicken reaches 165 degrees Fahrenheit.
6. Arrange the 6 pineapple rings, on top of the chicken. Brush the reserved marinade on top of the pineapple rings and chicken thighs.
7. Adjust the oven to broil and broil the chicken for 3-5 minutes. Watch it closely and remove it once the chicken is golden and caramelized.
White Rice
- 1 1/2 Cup Water
- 1/2 Cup Coconut Milk
- 1 Tbsp Butter
- 2 Cups Uncooked Instant Rice
1. Preheat your water and coconut milk on Medium- High Heat until boiling.
2. Add your butter and wait for it to melt.
3. Add your rice, stir. Remove from heat
4. Wait 5 minutes
Brown Sugar Broccoli
- 1 Head of Broccoli Chopped
- Hickory Brown Sugar Seasoning
- Black Pepper
- Seasoned Salt
- 1/4 Cup Chopped Onion
- 1 Tsp Minced Garlic
- 2 Tbsp Butter
1. Preheat a Non- Stick Skillet on Medium Heat and add your butter.
2. Add your broccoli and stir until all your broccoli is coated in butter.
3. Add your seasonings all over and stir until all is coated.
4. Cover and simmer for 5 mins. Stirring periodically until desired color and tenderness.
5. Remove from heat once achieved.
