LOADED CHILI CHEESE FRIES 🏈
What’s not to love? 🤤🤤
These loaded fries are topped with chili, cheese, sour cream, red onion & pickled jalapeño!
I made the fries from scratch using a French fry slicer from @tigerchefonline — they have everything you could ever need for your kitchen! 😍
For the fries:
After washing them thoroughly and running them through the slicer, I let them soak in an ice water bath to get some of the starch out.
Once they are clean, remove them from the water and make sure to pat them until they are super dry.
Add to hot vegetable oil (medium heat)
I let them fry for about 10 minutes until they were slightly golden. I removed them and re-added them to the oil to help them get nice and crispy.
Once golden, remove from the oil and add to a paper towel lined dish.
Immediately hit them with some salt.
Add whatever toppings you like and enjoy! 😎

Okay, so we all know chili cheese fries are a classic, but making them at home means you can truly customize them to perfection! Beyond the basics, I've got some extra tips and ideas to really elevate your game day spread or just satisfy that ultimate comfort food craving. First, let's talk about the star player: the cheese! While classic cheddar is amazing, don't be afraid to experiment. For that super gooey, melty pull, a blend of shredded sharp cheddar and Monterey Jack works wonders. If you're feeling a bit more adventurous, try a sprinkle of cotija cheese after they come out of the oven for a salty, crumbly texture, or even a creamy queso blanco for a milder, smoother sauce. Some folks swear by a touch of Velveeta (gasp!) mixed with real cheese for maximum meltiness. And for those who love a bit of a kick, a pepper jack cheese can add a subtle heat that complements the chili perfectly. Forget just 'cheese powder for fries' – we're going for the real deal here! Now, for the chili itself. While the original recipe focuses on the fries, a great chili makes all the difference. If you're short on time, a good quality canned chili is totally acceptable – just heat it through and maybe add a dash of your favorite hot sauce or a pinch of cumin for extra flavor. If you're making it from scratch, remember to let it simmer for a while; the longer it cooks, the more the flavors meld. A simple ground beef chili with kidney beans, diced tomatoes, onion, and a robust chili powder blend is all you need. You can even make a vegetarian version using lentils or a mix of beans for a healthier twist. Beyond the sour cream, red onion, and pickled jalapeños mentioned, let's dive into more 'french fry toppings' and 'what goes on loaded fries' ideas. Imagine adding crispy bacon bits – because, well, bacon! Freshly chopped green onions or chives add a nice pop of color and a mild oniony bite. A dollop of fresh salsa or homemade pico de gallo can bring a refreshing tang. For extra richness, a swirl of creamy avocado or a scoop of guacamole is divine. And if you're a heat-seeker like me, a drizzle of sriracha or chipotle mayo can take things up a notch. For a truly decadent experience, some people even add a fried egg on top! Seriously, don't knock it till you've tried it. Think about different 'fries menu ideas' – you could do a BBQ pulled pork loaded fry, or even a spicy buffalo chicken version with blue cheese crumbles. To make sure your fries stay CRISPY under all those delicious toppings, remember the double fry method. After the initial fry, let them cool down completely before their second dip in the hot oil. This ensures a super crunchy exterior that can stand up to the chili and cheese. Also, make sure your toppings aren't too watery, as that can make the fries soggy quickly. If you're serving these for a "GAME DAY" party, consider keeping the toppings in separate bowls so everyone can customize their own 'loaded cheese fries recipe' right at the table. This is especially fun if you have guests with different preferences, like some who love extra jalapeños and others who prefer just cheese and chili. Enjoy creating your ultimate loaded fries!
