This year I got a recipe-a-day calendar for Christmas and I thought….. why not cook through it?
no promises I'll hit every single day but I'm excited to try as many as I can and bring y'all along for the good, the fails, and everything in between

This one is a keeper and strong start!
Here's the recipe!
INGREDIENTS:
• 2 cups all-purpose flour
• 2 tsp baking powder
• ¼ tsp salt
• 1 tbsp sugar (optional)
• 2 eggs
• 1½-2 cups milk
• 2 tbsp melted butter (optional)
STEPS:
heat your pan: warm a skillet or griddle over medium-low
dry mix: whisk flour, baking powder, salt, and sugar in a big
bowl.
wet mix: in another bowl beat the eggs with the milk and
melted butter.
combine: pour wet into dry and stir just until moistened -
leave a few lumps.
5 pour & cook: butter the pan (or use oil), then ladle batter into rounds. cook until bubbles rise and edges look set — ~2-4 min.
6 flip & finish: flip and cook the other side until golden. repeat until the batter's gone.
serve: stack 'em, top 'em with butter & maple syrup (or fruit!), and enjoy.
+ tips: don't overmix your batter — a few lumps = fluffy pancakes every time.
