It’s surprisingly easy to make ahead and just warm up when guests arrive. Then there's the chili! Homemade vegetarian chili is a game-changer. I love loading mine with different beans (kidney, black, pinto), corn, bell peppers, and a rich tomato base, seasoned with chili powder, cumin, and a hint of smoked paprika. Don't forget the toppings – shredded cheese, sour cream (or a vegan alternative), chopped green onions, and a sprinkle of fresh cilantro make all the difference. It’s perfect for scooping with corn chips, or even serving over a baked potato. Dips are a non-negotiable for Super Bowl. My go-to is a homemade 7-layer bean dip. Start with a refried bean base, add guacamole, sour cream, salsa, shredded lettuce, tomatoes, and a generous layer of cheese. It’s colorful, satisfying, and disappears fast! And for something super quick, a good quality store-bought spinach artichoke dip, like the one from La Terra Fina, is a lifesaver. Serve it with plenty of tortilla chips and a colorful veggie platter featuring carrots, snap peas, radishes, bell peppers, and purple cauliflower, alongside some ranch dressing. And what about pizza? You can't go wrong with it! Pizano's cheese & veggie pizza was a fantastic shortcut for us. If you're making your own, load it up with your favorite vegetables like mushrooms, onions, peppers, and olives. A good quality crust makes all the difference. Don't forget the fun, quirky snacks too. I tried 'naked Hot Cheetos' for the first time this year – a less messy, but still flavorful option! And for desserts, you need quick, satisfying treats. Target's brownie bites are always a hit, easy to grab and pop. An assortment of Nerds candy and Kinder Bueno minis adds a nice sweet touch. Finally, drinks! A mix of classic Coca-Cola and refreshing Poppi prebiotic soda (strawberry lemon is my favorite!) keeps everyone hydrated and happy.
