The secret lies in its delicate balance – it's not overly spicy, but incredibly aromatic, thanks to ingredients like saffron, kewra water, and that signature fried potato. Many biryanis skip the potato, but in Kolkata style, it's a non-negotiable must-have! Plus, the chicken is often cooked until it’s fall-off-the-bone tender, infused with all those lovely spices, making every bite a delight. My biggest tip for getting that perfect biryani is to focus on layering. It’s not just about mixing everything; it’s about creating those distinct, flavorful layers that steam together beautifully. I always start by marinating the chicken overnight if I can – it makes such a difference to the tenderness and depth of flavor. For the potatoes, don't skip frying them lightly with a pinch of turmeric and salt. This gives them a beautiful golden crust and keeps them from getting mushy when they cook with the rice.
