Cooked up some smoked pork ribs the other week

This cook took about 5 hours smoked on my #weber kettle. Using the 3-2-1 method, they came out smokey, tender and great. #BBQ #bbqribs #foodoflemon8 #food

Smoked at 225 degrees for around 3 hours. Spritzing apple juice every hour. At 160 degrees I wrapped them for two hours in foil. I laid them on a bed of butter, brown sugar and apple juice in the foil. Unwrapped them and let them continue to smoke until 203 degrees. Removed from the grill and wrapped them in foil again and let them sit for two hours.

The 3-2-1 method is a popular technique for cooking ribs, especially for those using a smoker or kettle grill. The process involves smoking the ribs for 3 hours, wrapping them in foil for 2 hours to retain moisture, and then smoking them again for an additional hour. This ensures that the ribs are not only flavorful but also tender and juicy. During the first stage, keeping the smoker at a consistent temperature of around 225 degrees Fahrenheit is crucial. Spritzing the ribs with apple juice every hour not only adds flavor but also helps to maintain the moisture content, creating a delicious bark on the outside. The second phase, where you wrap the ribs in foil, can be enhanced by adding ingredients like brown sugar and butter; these create a caramelized layer of goodness that enhances the sweetness and richness of the meat. For the final hour of smoking, it’s important to leave the wrapping off to allow the ribs to develop that signature smoky flavor and texture. Reaching an internal temperature of 203 degrees indicates that the ribs are perfectly cooked; it’s the sweet spot where the collagen breaks down, leading to that melt-in-your-mouth experience. After smoking, resting the ribs in foil for two hours can significantly enhance their flavor and tenderness, making it well worth the wait. Pair your perfectly smoked pork ribs with classic sides such as coleslaw, baked beans, or cornbread for a truly iconic BBQ meal. Remember, practicing your technique will refine your skills and seasoning combinations, and soon you’ll impress family and friends with your rib-cooking prowess.
