Low Carb Stuffed Chicken

Low Carb Stuffed Chicken is a meal the whole family will enjoy. The cheesy spinach filling is packed with flavor from the garlic and parmesan. Try it and tag me! Recipe below 👇

Low Carb Stuffed Chicken

3 chicken breasts (about 1.5 lbs)

1.5 cup chopped baby spinach

2 cloves garlic (minced)

1/3 cup shredded mozzarella

1/4 cup grated Parmesan

6 oz cream cheese

Paprika

Poultry seasoning

Salt and pepper

- Preheat oven to 375f

- Bring chicken breasts to room temp and pound out the breasts to make sure it’s an even thickness (you want about an inch thick for even cooking)

- Season the outside with paprika, poultry seasoning, salt and pepper to your preference

- Cut slits into the side of the breasts to form a pocket (don’t slice all the way through)

- Mix the cream cheese, mozzarella, Parmesan, garlic, and spinach in a bowl until well combined

- Fill each chicken breast pocket with an even amount of the spinach/cheese filling and slightly flatten so that the breasts aren’t super rounded

- Secure the outer edge of the chicken with a toothpick sideways (horizontal) so that the gap is closed holding in the filling.

- Sear the chicken breasts over medium/high heat in avocado oil or any neutral flavored oil for 3 min per side

- Transfer the same skillet to the preheated 375f oven for 15 min.

- Remove toothpicks before serving.
