Low Carb Tuscan Chicken

Creamy Tuscan Chicken is a flavorful Italian-inspired dish featuring tender chicken breasts simmered in a rich, creamy sauce with sun-dried tomatoes, spinach, and Parmesan cheese. This low carb meal is super satisfying!

You need:

2 large chicken breasts, about 1.5 lbs (halved into cutlets)

2 tbsp avocado oil

3 cloves garlic (minced)

2 cups baby spinach (packed)

1/4 cup sun dried tomatoes

1 cup heavy cream

1/2 cup chicken broth

1/2 cup Parmesan cheese (grated)

Slice chicken breasts in half to form cutlets. Season chicken breasts with salt and pepper and Italian seasoning.

Add avocado oil to a pan over medium heat and sear chicken breasts on one side for 3-4 minutes with lid on. Flip chicken over and sear for another 3-4 minutes until cooked through. Chicken should be fully cooked at 165f temperature. Remove from the pan and set aside.

In the same pan, add a little bit more oil if the pan is dry and sauté the garlic for a minute. Then add the chicken stock and sun dried tomatoes, stir and let simmer for another 2-3 minutes.

Over medium low heat, stir in the heavy cream and Parmesan and let simmer until creamy and thickens a little.

Stir in the baby spinach until the spinach is wilted.

Add back in your chicken breasts and cover with sauce and serve warm. You can serve with freshly grated Parmesan cheese on top.
