... Read moreLeche flan is a classic Filipino dessert known for its rich and silky texture. This recipe stands out by incorporating cream cheese, which lends an extra creaminess and helps balance the sweetness typically associated with leche flan. The caramel layer is made by slowly caramelizing about 2 cups of sugar until golden, which creates a delightful contrast with the smooth flan beneath. In achieving the perfect texture, beating the cream cheese until fluffy is key—it ensures the final product is velvety and luxurious. Adding eggs one by one while mixing well helps create a consistent custard base, preventing curdling or lumps. The use of both condensed and evaporated milk contributes to the flan’s richness while keeping it from becoming overly sweet, which is a common criticism of traditional leche flan. Straining the mixture before pouring it onto the hardened caramel not only removes any solids but also results in a silkier finish. Baking at 375°F covered loosely with foil allows gentle cooking, preventing the custard from cracking or drying out. Removing the foil toward the end helps create a nice set on top without overbaking, preserving moisture inside. When serving, allow the flan to cool completely so it sets properly and slices cleanly. This dessert pairs wonderfully with fresh fruit or a light drizzle of caramel sauce for an enhanced experience. For those interested in variations, try adding flavors like a hint of citrus zest (lemon or orange) or infuse the caramel with a touch of espresso for a nuanced twist. This recipe is versatile for gatherings or simple family treats, ensuring a memorable dessert that’s creamy, smooth, and perfectly balanced in sweetness.
