🍪 BISCOFF TIRAMISU

Ingredients

Cream Layer

• 4 large egg yolks

• ½ cup white sugar

• 2 cups mascarpone cheese, room temperature

• 1 cup heavy cream or all-purpose cream

• 1 teaspoon vanilla extract

For Assembly

• Biscoff cookies (about 2 packs, depending on tray size)

• 1½–2 cups black coffee (instant or brewed), cooled

• Unsweetened cocoa powder (for dusting)

• Regular caramel sauce (store-bought or homemade)

👩‍🍳 STEP-BY-STEP INSTRUCTIONS

STEP 1: Make the Egg Yolk Base

1. Bring a saucepan with 1–2 inches of water to a gentle simmer.

2. In a heatproof bowl, whisk together:

• 4 egg yolks

• ½ cup white sugar

3. Place the bowl over the simmering water (double boiler).

4. Whisk constantly for 5–7 minutes until:

• Pale yellow in color

• Thick and creamy

• Sugar fully dissolved

5. Remove from heat and let cool for 5 minutes.

🔹 Whisk continuously to avoid scrambling the eggs.

STEP 2: Add the Mascarpone

1. Make sure mascarpone is room temperature.

2. Add mascarpone to the egg mixture gradually.

3. Mix gently until smooth and creamy with no lumps.

🔹 Do not overmix.

STEP 3: Whip the Cream

1. In a separate bowl, add:

• 1 cup heavy cream

• 1 tsp vanilla extract

2. Beat using a hand mixer or whisk until stiff peaks form.

3. Stop immediately once stiff peaks appear.

STEP 4: Combine the Cream Mixture

1. Fold the whipped cream into the mascarpone mixture in 3 additions.

2. Use a spatula and fold gently to keep the mixture light and fluffy.

3. Mix until fully combined and airy.

☕ STEP 5: Prepare the Coffee

1. Brew strong black coffee (instant or brewed).

2. Let it cool completely.

3. Pour into a shallow bowl.

🧁 STEP 6: Assemble the Tiramisu

First Layer

1. Quickly dip each Biscoff cookie into coffee for 1–2 seconds.

2. Arrange cookies in a single layer in a glass tray.

Cream Layer

3. Spread a generous layer of the cream mixture.

4. Smooth evenly.

5. Lightly dust with unsweetened cocoa powder.

Second Layer

6. Dip another batch of Biscoff cookies into coffee.

7. Place them neatly on top.

8. Drizzle regular caramel sauce evenly over the cookies.

Final Layer

9. Spread the remaining cream mixture evenly.

10. Add a final layer of Biscoff cookies.

11. Drizzle more regular caramel sauce on top.

12. Decorate with two Biscoff biscuits for design.

❄️ STEP 7: Chill & Set

• Cover and refrigerate:

• At least 2 hours

• Overnight (best result)
