White Lasagna Soup
Ingredients:
2lbs ground Italian sausage
1 onion, chopped
1tbsp minced garlic
Salt and Pepper
1tsp basil
1tsp oregano
1/4 cup flour
Half a bag of baby spinach
2 cups heavy whipping cream
1 32oz carton chicken broth
8-9 lasagna noodles, broken into small pieces
1-2 cups shredded Parmesan
Directions:
1. In a pot, brown ground Italian sausage with onions. Add seasonings listed but feel free to add other seasonings to make it your own.
2. Sprinkle flour into pot and stir. This will help absorb the grease from the sausage and make the soup slightly thick.
3. Stir in the spinach and left it wilt a little.
4. Add the carton of chicken broth and the heavy whipping cream. Stir to combine.
5. Break lasagna noodles into the pot and stir. Cook on low until noodles are soft.
6. Once lasagna noodles are done, stir in cheese. You can add or subtract as much or as little cheese as you’d like. Allow cheese to melt.
7. Enjoy with a side salad and garlic bread!
