Pollo à la Crema

Ingredients:

Chicken

4 Poblano Peppers

Half of White Onion

5 Garlic Cloves Minced

Kinders -The Blend & Buttery Chicken

1 Cup Mexican Cream

2 Cups Chihuahua Cheese

1 Cup Heavy Cream

1/2 Block Philadelphia Cream Cheese

I used Boneless chicken thighs (you can use what ever you have on hand)

Added some @Kinder’s Buttery Garlic salt and The Blend for seasoning. Sliced the meat into strips. Add minced garlic and let rest for meanwhile you get your Poblano Peppers charred.

Cook chicken with a small amount of oil and once cooked add you sliced onions and peppers and then add: 1 Cup Mexican Cream, 2 Cups Chihuahua Cheese, 1 Cup Heavy Cream and 1/2 Block Philadelphia Cream Cheese. Stir well and let it simmer for about 10min so the sauce thickens up a bit. Add additional seasoning of you want to. Serve and enjoy!

*Poblano Peppers were deseeded and charred on the stove top. You will have to let them steam up in a bag for a few minutes. After a few minutes remove the burnt skin off and slice into strips.

... Read moreOkay, so you've seen my basic recipe for Pollo a la Crema, but let me share some of my favorite tips and tricks to really elevate this dish and make it your own! When I first started making this authentic Mexican chicken poblano dish, I had a few questions myself, so hopefully, this helps you too. First off, let's talk about the chicken. While my recipe suggests using boneless chicken thighs, which are my absolute go-to for their juiciness and flavor, you can totally use boneless skinless chicken breast if that's what you have on hand or prefer a leaner option. If you opt for thigh fillets, they cook up beautifully and absorb all that creamy sauce, ensuring every bite is tender and flavorful. Now, for those amazing poblano peppers! Charring them is absolutely key for that deep, smoky flavor that truly makes this dish. I usually do mine directly over a gas flame until they're blackened on all sides, then immediately pop them into a Ziploc bag or cover them with a bowl for about 10-15 minutes. This steaming process makes peeling the burnt skin off super easy. Trust me, don't skip this step – it really makes a difference compared to just dicing them raw! If you don't have a gas stove, you can achieve a similar char by placing them under the broiler in your oven, turning frequently. The sauce is where the magic truly happens, and getting that perfect creamy texture is crucial for a mouth-watering pollo a la crema recipe. I’ve found that using a combination of Mexican cream, heavy cream, and half a block of Philadelphia cream cheese gives it that rich, velvety finish that everyone raves about. The Chihuahua cheese melts in beautifully, adding that classic slightly tangy, cheesy goodness. If you can't find Chihuahua cheese, Monterey Jack or a good quality oaxaca cheese are excellent substitutes. Sometimes, if my sauce isn't thickening enough after 10 minutes, I let it simmer a little longer, or for a quick fix, I've been known to whisk in a tiny bit of cornstarch slurry (1 teaspoon cornstarch mixed with 1 tablespoon cold water) at the very end, stirring constantly until it reaches my desired consistency. Serving this Pollo a la Crema is half the fun! It's absolutely fantastic with a side of Mexican rice and warm corn or flour tortillas for scooping up every last bit of that delicious sauce. For a lighter, low-carb meal, which is often how I enjoy it (perfect for those on a keto journey!), a simple side salad or some steamed veggies works perfectly. It's already quite hearty on its own! And for those who like a little kick, feel free to add a pinch of cayenne pepper or a dash of your favorite hot sauce to the sauce while it's simmering. On the flip side, if you're not a fan of spice, just make sure to deseed your poblano peppers thoroughly, as most of the heat resides in the seeds and membranes. This dish is so versatile, and I've even added sliced mushrooms or corn kernels for extra veggies. I hope these extra tips help you create an even more incredible authentic Mexican chicken poblano dish at home! It’s become a staple in my kitchen, and I bet it will in yours too.
