If you're looking for a unique twist on classic chocolate muffins, incorporating a sourdough chocolate starter adds both depth of flavor and a moist texture to your baked goods. Using 150 grams of active chocolate starter or discard helps ferment the batter slightly, resulting in those signature tangy notes typical of sourdough-based recipes. To boost the richness, the recipe calls for ⅔ cup of cocoa powder combined with 1 ½ cups of semi-sweet chocolate chips, which melt beautifully during baking to create gooey pockets of chocolate. Including avocado oil as the fat source adds a subtle nutty taste while keeping the muffins moist without overpowering the chocolate flavor. The use of 1 ¼ cups granulated sugar balances the cocoa's natural bitterness, and the wet ingredients—eggs, sour cream, vanilla extract, and whole milk—work together to produce a tender crumb structure. Refrigerating the batter overnight not only allows flavors to meld but also helps develop the texture by letting the baking soda and powder activate gradually once baked. For best results, after taking the batter out of the fridge, preheat your oven to 375°F, fill muffin tins halfway to allow room for rising, and bake for 22 to 24 minutes depending on your muffin size. Let them cool completely before enjoying or storing in an airtight container to maintain freshness for up to a week—though they rarely last that long! This sourdough double chocolate muffin recipe is perfect for breakfast, an afternoon treat, or serving at brunch. By combining traditional baking techniques with the unique fermented flavor of sourdough starter, these homemade muffins highlight both comfort and gourmet qualities of chocolate desserts. Experiment with adding nuts or drizzling a simple chocolate glaze on top for an extra indulgence. Either way, these muffins offer a delicious way to use your sourdough discard and satisfy any chocolate craving.
