I’ve tried many biscuit recipes over the years, but adding blueberries and lemon zest makes a refreshing twist that brightens each bite. The combination of buttermilk and whole milk gives the dough a tender, moist texture, while melting butter underneath during baking helps create a buttery crust that’s irresistibly flaky. One tip I’ve learned is to gently fold the wet ingredients into the flour mixture without overmixing—this keeps the biscuits light and fluffy rather than dense. For the blueberry distribution, tossing the berries in the flour mix before adding liquids really prevents them from sinking to the bottom or bleeding too much color into the dough, keeping each bite pleasantly studded with fresh blueberries. The lemon zest adds a citrusy aroma that complements the sweet berries wonderfully. The glaze is simple yet crucial—it adds a subtle sweetness and a bright lemon tang that balances the rich buttery flavor of the biscuits. When glazing, I find it best to pour it over the biscuits while still warm so it can soak in nicely without becoming runny. I’ve served these biscuits at brunches and they’ve always been a hit, especially paired with fresh fruit and a hot cup of tea or coffee. If you want to experiment, adding a little vanilla bean or swapping some of the all-purpose flour for whole wheat can give a different depth of flavor. Overall, this blueberry lemon butter biscuit recipe became one of my favorites for quick, impressive homemade treats you can bake without fuss.
