Y’all know I love a dessert that looks like I did the most…when I really didn’t. 😂🙌🏽 This No-Bake Chocolate Éclair Cake is EASY and so good! And that homemade chocolate frosting? 😮‍💨

NO-BAKE CHOCOLATE ÉCLAIR CAKE 🍫🤎

Ingredients:

• 2 (3.4 oz) boxes instant vanilla pudding mix

• 3½ cups cold milk

• 1 (8 oz) container whipped topping, thawed

• 1 box graham crackers

• Homemade chocolate frosting (recipe below) OR store-bought chocolate frosting if you prefer

Directions:

1. Whisk the vanilla pudding mix and milk together until smooth and thickened. Gently fold in the whipped topping.

2. Cover the bottom of a 9x13 pan with a single layer of graham crackers, breaking them as needed to fit.

3. Spread half of the pudding mixture over the graham crackers.

4. Add another layer of graham crackers, then spread the remaining pudding mixture on top.

5. Finish with one more layer of graham crackers.

6. Spread the chocolate frosting evenly over the top.

7. Cover and refrigerate for at least 6-8 hours, but overnight is BEST! This is what makes those graham crackers soft and cake-like. 😍

HOMEMADE CHOCOLATE FROSTING 🍫

• ½ cup (1 stick) butter

• ⅓ cup unsweetened cocoa powder

• ⅓ cup milk

• 2 cups powdered sugar

• 1 tsp vanilla extract

• Pinch of salt

Melt the butter in a saucepan over medium-low heat. Whisk in the cocoa powder and milk until smooth. Remove from heat and whisk in the powdered sugar, vanilla and salt until smooth and glossy.

Let the frosting cool for about 5–10 minutes, then spread it over the top layer of graham crackers.

SAVE this one because it’s even better the next day! 🤤🍫 #fy #recipes #easyrecipe #dessert #sweets

... Read moreIf you're looking for a dessert that impresses without the fuss, the no-bake chocolate éclair cake is a lifesaver. What I love about this recipe is how it combines everyday ingredients like instant vanilla pudding, graham crackers, and whipped topping to create a luscious layered dessert that looks and tastes like it took hours. One personal tip is to let the cake chill overnight in the fridge; this step is crucial because it allows the graham crackers to absorb moisture from the pudding and whipped topping, transforming them into soft, cake-like layers. The homemade chocolate frosting in this recipe adds a wonderfully rich and creamy finish that contrasts perfectly with the lightness of the pudding layers. Making your own frosting is surprisingly easy and far superior to store-bought options – just melt butter with cocoa, add milk and powdered sugar, and finish with vanilla and a pinch of salt. For an extra touch, I like to spread the frosting while it's still slightly warm but not hot, which helps it set smoothly on top. Versatility is another bonus. You can swap the vanilla pudding with chocolate or butterscotch for different flavor twists, or add a layer of sliced bananas or strawberries between the layers for a fruity surprise. Plus, since this cake requires no baking, it’s perfect for hot days when you want a cool treat without heating up the kitchen. Overall, this no-bake chocolate éclair cake is a guaranteed crowd-pleaser that’s quick to put together, requires minimal cleanup, and delivers on flavor and presentation. Save this recipe to your collection – it’s a dessert you’ll return to again and again!
