NO-BAKE CHOCOLATE ÉCLAIR CAKE 🍫🤎
Ingredients:
• 2 (3.4 oz) boxes instant vanilla pudding mix
• 3½ cups cold milk
• 1 (8 oz) container whipped topping, thawed
• 1 box graham crackers
• Homemade chocolate frosting (recipe below) OR store-bought chocolate frosting if you prefer
Directions:
1. Whisk the vanilla pudding mix and milk together until smooth and thickened. Gently fold in the whipped topping.
2. Cover the bottom of a 9x13 pan with a single layer of graham crackers, breaking them as needed to fit.
3. Spread half of the pudding mixture over the graham crackers.
4. Add another layer of graham crackers, then spread the remaining pudding mixture on top.
5. Finish with one more layer of graham crackers.
6. Spread the chocolate frosting evenly over the top.
7. Cover and refrigerate for at least 6-8 hours, but overnight is BEST! This is what makes those graham crackers soft and cake-like. 😍

• ½ cup (1 stick) butter
• ⅓ cup unsweetened cocoa powder
• ⅓ cup milk
• 2 cups powdered sugar
• 1 tsp vanilla extract
• Pinch of salt
Melt the butter in a saucepan over medium-low heat. Whisk in the cocoa powder and milk until smooth. Remove from heat and whisk in the powdered sugar, vanilla and salt until smooth and glossy.
Let the frosting cool for about 5–10 minutes, then spread it over the top layer of graham crackers.
