Veggie Omelette with Fresh Salsa
Ingredients
• 2–3 large eggs
• 1–2 tablespoons milk or water (optional, for fluffiness)
• Salt & black pepper, to taste
• 1–2 tablespoons butter or oil
• ¼ cup diced onion
• ¼ cup diced bell pepper (any color)
• Optional add-ins: spinach, green onions, mushrooms, or cheese
Fresh Topping
• Diced tomato
• Diced onion
• Chopped cilantro or green onion
• Pinch of salt & pepper
Instructions
1. Whisk eggs,salt, and pepper until fully blended.
2. Sauté veggies in a nonstick skillet over medium heat with butter or oil until softened (2–3 minutes).
3. Pour eggs over the vegetables and let set slightly.
4. Gently fold the omelette as the eggs cook, keeping it soft and fluffy.
5. Remove from heat when just set (don’t overcook).
6. Top with fresh tomato, onion, and herbs if desired.
Conecuh Sausage (Air Fryer)
Ingredients
• 1–2 Conecuh sausages
Instructions
1. Preheat air fryer to 370°F.
2. Place sausages in the basket (do not pierce).
3. Air fry for 8–10 minutes, turning halfway.
4. Remove when heated through and lightly browned.
Air Fryer Roasted Potatoes
Ingredients
• 2 medium russet or gold potatoes, diced
• 1–2 tablespoons olive oil
• ½ teaspoon garlic powder
• ½ teaspoon onion powder
• ½ teaspoon paprika
• Salt & black pepper, to taste
Instructions
1. Toss potatoes with oil and seasonings until evenly coated.
2. Preheat air fryer to 400°F.
3. Air fry for 12–15 minutes, shaking the basket halfway.
4. Cook until golden brown and fork-tender.
5. Season to taste before serving.
Making breakfast for loved ones is such a rewarding experience that brightens the start of the day. When I tried preparing the veggie omelette with fresh salsa, I found that using 1–2 tablespoons of milk or water really helped to make the eggs fluffier and lighter. Sautéing onions and bell peppers just until softened retains their natural sweetness and adds a nice texture without overpowering the eggs.
